So as you guys know I'm doing a 30 day vegan challenge and a Fajr challenge. I've been buying Gluten Free desserts for months now and some of them just don't tickle my fancy :/. I figured one of the most difficult parts about this challenge is coming up with desserts. Sugar can be such a problem and every now and then I get those cravings. I made a Blueberry Cobbler dish that is so good that I had to share it with you guys. You guys should give it a try and let me know what you think! Everyone in the family gave it 5 stars and that's awesome :). Here's how I made it. Ingredients: For the filling 1 lb blueberries 2 tbsp lemon juice 1/4 cup coconut syrup 2 tsp cornstarch (but I didn't have that on hand so I used my corn flour lol yeah I was spontaneous) For the topping 1/2 cup vegan butter 1/4 cup coconut syrup 2 cups gluten free flour 2 tsp baking powder 2/3 cup coconut milk 1/4 cup Stevia Extra: Coconut Cool Whip Directions: 1. Preheat oven to 350 2. In a large mixing bowl, stir lemon juice, coconut syrup, and cornstarch until combined. Stir blueberries to coat, transfer to buttered pie pan 3. Topping- in a food processor- cut butter into syrup, flour and baking powder until the butter is pea sized, add coconut milk and stir until a dough forms. When the dough didn't form the way I wanted it to then I added a little bit more until I got it where I wanted it. 4. Take rough patches of dough and spread over the blueberries-leave little gaps so that the juices can get through 5. Melt some vegan butter and spread over top and then sprinkle stevia on top 6. Bake for 50 mins Add some coconut whip cream and live your life y'all!!!
