Vegan/Gluten Free Blueberry Cobbler

So as you guys know I'm doing a 30 day vegan challenge and a Fajr challenge. I've been buying Gluten Free desserts for months now and some of them just don't tickle my fancy :/. I figured one of the most difficult parts about this challenge is coming up with desserts. Sugar can be such a problem and every now and then I get those cravings. I made a Blueberry Cobbler dish that is so good that I had to share it with you guys.
 You guys should give it a try and let me know what you think! Everyone in the family gave it 5 stars and that's awesome :).
Here's how I made it.

Ingredients:
For the filling
1 lb blueberries
2 tbsp lemon juice
1/4 cup coconut syrup
2 tsp cornstarch (but I didn't have that on hand so I used my corn flour lol yeah I was spontaneous)

For the topping
1/2 cup vegan butter
1/4 cup coconut syrup
2 cups gluten free flour
2 tsp baking powder
2/3 cup coconut milk
1/4 cup Stevia
Extra: Coconut Cool Whip
 Directions:

1. Preheat oven to 350
2. In a large mixing bowl, stir lemon juice, coconut syrup, and cornstarch until combined. Stir blueberries to coat, transfer to buttered pie pan
3.  Topping- in a food processor- cut butter into syrup, flour and baking powder until the butter is pea sized, add coconut milk and stir until a dough forms. When the dough didn't form the way I wanted it to then I added a little bit more until I got it where I wanted it.
4. Take rough patches of dough and spread over the blueberries-leave little gaps so that the juices can get through
5. Melt some vegan butter and spread over top and then sprinkle stevia on top
​6. Bake for 50 mins

Add some coconut whip cream and live your life y'all!!!
I was inspired by this recipe that I read.
